Yum! We call this tater tot casserole. I need to make it again soon.
This is a great base recipe – I made it as directed and also added peas and mushrooms (also thought asparagus could be yummy) in lieu of a veggie dish on the side. Also substituted Greek yogurt for sour cream and ground chicken for beef to make it a little healthier. Thanks for sharing!!

I made the cowboy casserole last night, thinking it sounded so good. Well, it was not good at all. It was so bland, had no taste at all. It really needs something spicy to jazz it up.
We find it bland as well, but’s a great recipe. So our challenge is to spice it up. I liked it with BBQ sauce/ For next time, we are thinking peas and several spices. Also possibly ketchup and bread crumbs–like in meatloaf.

Why is the word “your” in front of every ingredient? And was it really necessary to say “your oven” and “your casserole”? Did you think I might be using someone else’s oven or someone else’s casserole?

Ok, I’m hoping this doesn’t sound idiotic – it looks like in the ‘before I baked it’ picture that the tater tots were already baked. Yes/no?

Thank you. Made this for my family of 6 tonight. We used venison since we have a bunch from hunting season. It was delicious! Had to cook a little extra because it wasn’t hot through out but that’s an easy fix!

I printed this by doing Ctrl P, and printed only page 2 and then hand wrote the directions beside the list of ingredients. You could print the entire recipe but it would waste a lot of ink. You would probably have to print pages 2 to 4 or 5
We are sharing our favorite casserole recipe, a heart Cowboy Casserole Recipe that is perfect for cold winter nights or potlucks.
It’s around 40 degrees here in Tennessee today and it’s only the beginning of November! I’m thinking it’s going to be a cold winter for us which is something we are not really used to! I personally don’t mind the cold weather (as long as I don’t have to be out in it, ha!) because cold weather mean it’s time for snuggles and holidays! Casseroles are one of my favorite things to make during the winter because they are easy to make and are hot and filling. One of my family’s favorite casserole’s is this Cowboy Casserole Recipe! It brings together some meat, veggies, cheese, and tots all in 1 dish and is oh-so-yummy! Want to learn how to make it?
Here is how to make my Cowboy Casserole Recipe:
You Will Need:
1 1/2 pounds ground beef
2 cups shredded cheddar cheese
1 med. onion (chopped)
2 cloves garlic (chopped)
1/2 cup milk
1 can corn (drained)
1 can Cream of Mushroom soup
4 tbs sour cream
1 bag frozen tater tots
Step 1: In a skillet cook your chopped onions until soft and slightly browned, add in your garlic and let simmer for about 2 minutes. Add your beef in and cook over medium heat until browned. Drain and place into a bowl.
Step 2: Next, in a small bowl combine your soup, milk, and sour cream and combine until smooth, add into your bowl of beef and mix well to combine.
Step 3: Next add your corn and 1 cup of shredded cheese to your beef mix and mix well to combine.
Step 4: Preheat your oven to 350 degrees. Grease a 9×13 pan and add a layer of tater tots to the bottom of the pan. Then add your beef mixture on top, then the remaining of your tater tots, and then top with 1 1/2 cups of cheese. Put your casserole in the oven and let cook for 25-35 minutes of until cheese is bubbly. (*Note- you can make this the night before and stick in the fridge to make the next day, it actually tastes great that way!)
That’s it! About 15 minutes of prep time and 30 minutes to cook and you have a hearty, hot, yummy meal that your family is sure to love on a cold winters night! This will quickly become one of your favorite casserole recipes.
